Our Story

Forage was established in 2025 by American restaurateur Jared Jones, inspired by Edinburgh’s vibrant and historic culinary traditions.

Jared began his culinary journey in Charleston, South Carolina, where he built a name for himself by running and developing a series of successful restaurants known for their hospitality, bold flavors, and attention to local tradition. With a passion for storytelling through food, he immersed himself in the rich culinary culture of the American South before setting his sights abroad.

Inspired by Edinburgh’s deep history, vibrant food scene, and status as a cultural capital, he launched Forage in 2025. Drawing on 15 years of experience in multiple restaurants and his passion for culinary heritage, Jared has created immersive, entertaining tours that connect locals and visitors alike to the flavors, stories, and hidden gems of Edinburgh’s culinary culture.
